The Merlot vineyards of Barone Fini are 15 to 18 ye ars old. Grape picking is manual; all blemished clusters are discarded. Selected grapes are taken to the excellent, state-of-the-art cooperative winery, where they are put through soft, cold crushing and a long, cold maceration. Juice is then divided into several units; each undergoing temperature controlled fermentation in stainless steel with varying skin concentrations followed by malolactic fermentation. After reaching equilibrium, juice sections are skillfully blended by our winemakers into the final Barone Fini Merlot. One of the top research centers for all aspects of winemaking is Instituto Agrario Provinciale at San Michele allAdige, established in 1847 by Emperor Franz Joseph. Within walking distance of the winery, this superb research facility is widely used by our winemakers to ensure outstanding Merlot quality, vintage after vintage.
